Scalloped Sweet Potatoes |Allergy Friendly, EOE friendly Recipe
Savory, creamy scalloped sweet potatoes made without dairy, gluten and common allergens.

  1. Preheat stove to 350 degrees
  2. Wash, peel, and slice sweet potatoes. If using red potatoes, wash and slice. Chop garlic and onions.
  3. Boil potatoes for 5-7 minutes until tender (do not overcook potatoes or they will be mushy).
  4. While potatoes are boiling place, bacon strips into cold saucepan and fry on medium until crispy.
  5. Reserve fat and place bacon on paper towel to drain.
  6. Once potatoes are done, drain in colander and let cool while you prepare the cheese sauce.
  7. Saute garlic and onion on low until garlic is soft and onion is translucent. This may take a few minutes, but be careful not to burn your garlic.
  8. Once garlic and onions are done, add gluten free flour (optional) and dairy free spread.
  9. Incorporate to “cook” flour. Cook for at least 2 minutes.
  10. Add dairy free milk of your choice, broth, and seasonings. Turn burner up to medium high and bring to boil. Stirring often. Taste mixture and add more seasonings, if needed.
  11. Once liquid is boiling, add dairy free cheeses, stir, and bring down heat to medium low. Continue to stir until cheese has completely melted and starts to thicken.
  12. Turn cheese sauce down to low heat, continue to stir for 3-5 minutes.
  13. Remove sauce from burner and let rest while you season your potatoes with additional salt pepper (optional)
  14. Stir cheese sauce, pour thin layer of sauce of bottom of baking dish/pan.
  15. Add layer of potato and cover with sauce. Repeat layers and sauce until sauce is gone.
  16. Crumble bacon over potatoes and bake for 20-25 minutes until brown and bubbly.
Recipe Notes

The key with dairy free cheese is that you have to season it. Don’t be afraid to add seasonings. Salt, pepper, garlic powder, cayenne, ect are all good seasonings to add to any dairy free savory foods that you are preparing.
