What better way to get your groove back is by making pancakes, specifically Buckwheat Pancakes. A few weeks ago I wrote a post about Spring Break Count Down and the recipes I would be making to take with us on our trip to GA, but due to work related stress over the last few of weeks, the last thing I have been able to do is batch cook and prepare the recipes I posted about. After resting over the last week or so, I’ve finally gotten the groove back and ready to be back into the kitchen developing and preparing some yummy recipes take on our trip recipes your entire family will love.
Buckwheat Pancakes are up on the list to make today, and I must say, these pancakes are incredibly delicious, filling, and super easy to make. You will forget they are gluten and dairy free. You may even forget these aren’t dessert (but they sure taste like it). My boys and I can eat these pancakes all day, every day, by themselves, with syrup, raw honey, extra dairy free chocolate chips, fruit, or with a sausage patty in between them and make it like a griddle cake sandwich. You name it! These pancakes can hold up to it all.
I used Arrowhead Mills gluten free buckwheat flour and Manini’s Multi-purpose flour. Any multipurpose flour will work, but when it comes to buckwheat flour, hands down, my choice is Arrowhead Mills. The combination of the two flours makes the best pancakes. Try it out, you’ll agree. A little factoid for you… Did you know that buckwheat is actually a fruit seed related to rhubarb and sorrel? Buckwheat is suitable for people who are sensitive to gluten and grains, making it our number one go to when preparing bread type items.
I like cooking my pancakes on an electric griddle, because it allows me to make more pancakes, which cuts my cooking time in half. Plus, you can make an entire meal on the griddle; just add eggs, sausage or bacon.
Don’t forget to add in your favorite mix-ins too. I’m using Enjoy Life mini dairy free chocolate chips, but the choice is yours. Be creative! I bet adding in pieces of bacon would take these pancakes to a whole new level (hmmmmm! Idea alert).
