Taco Casserole (Allergy Friendly, EOE Diet Friendly, Gluten, Grain, Soy, Dairy, Peanut & Tree Nut Free; Top 8 Free)
This Taco Casserole is not only savory, but it is easy and filling. It’s also free of grains, gluten, dairy, and the most common 8 allergens, making it a wonderful dish that you can share with anyone.
Ingredients for chicken
raw chicken tenders
addtl 1/4C for sauce
Ingredients for tostones
enough to cover tostones in a bowl
preferred cooking oil
enough to fry tostones in
Preheat stove to 375 degrees.
Place tostones in a bowl, cover with water and salt (1tblsp).
Pour ½- 1 cup of water into skillet that will be used to cook chicken. Season water with salt and pepper.
Add chicken and bring to a boil.
Reduce heat to medium low until chicken is fully cooked.
Pour water off of chicken. Taste chicken to check for need of additional seasonings.
Shred chicken and add it back to the skillet.
Add ¼ cup of water and taco sauce. Simmer for at least 5 minutes.
While chicken is simmering, heat up cooking oil. Drop a little water into. If it sizzles, it’s ready!
Pour water off of tostones and place 2-3 tostones into oil. Fry 3 minutes on both sides.
Place on paper towel lined plate to drain off excessive oil.
Once all tostones have been fried. Prepare dairy free taco cheese sauce or use your favorite dairy free cheese sauce.
Once chicken, tostones, and cheese sauce are done, start to layer in pan.
Add ¼ C taco cheese sauce to bottom pan.
Break apart tostones into halves or quarters. Or you can leave them whole.
Place half of tostones on top of cheese sauce.
Add chicken mixture.
Add some taco cheese sauce (as much as you would like).
Add remaining tostones. Cover with additional cheese sauce.
Place casserole pan in over (uncovered) for 20 minutes or until cheese sauce starts to bubble.
Remove from oven and let cool for 5 minutes before serving. Serve with your favorite taco toppings.
This casserole can be doubled to feed a crowd. This casserole can also be frozen.
