Instructions
  1. Please keep in mind that I am making these waffles to take on a trip, so my quantity of ingredients are more than I would typically use if I was just making these for a weekend breakfast.
  2. Mix dry ingredients, then add wet ingredient to the dry ingredients (no need to mix wet in a separate bowl). If you like thin waffles, add more dairy free milk. Mix well to incorporate and make sure there are minimal lumps.
  3. Let batter sit while you get you waffle maker hot.
  4. Once your waffle maker is ready, add ¼ (or more, if desired) to wells.
  5. Put the lid down, and let it cook for at least 5-7 minutes (do not raise the lid until waffles have cooked for a minimum of 2 minutes).
  6. Toast and eat immediately or cool and freeze.
Recipe Notes

I always toast my waffles before serving.

And don’t forget to top your waffles with some something yummy. My boys love dairy free chocolate chips on top of their waffles and I love to top my waffles with fruit, Greek style yogurt, and raw honey.
